Colorfull Idlis
Equipment
For Idli:
1. 🍡 1 cup samolina/suji
2. 🍡1/2 cup curd
3.🍡 1/2 cup water (quantity may vary based on batter consistency)
4. 🍡 1/2 cup spinach puree
5. 🍡 1/2 cup beetroot puree
6. 🍡 3-4 tbsp saffron water
7. 🍡 1 tbsp eno
8. 🍡 Salt to taste
9. 🍡 Pinch of sugar(optional)
For Chutney:
1. 🥣 1/2 cup dry coconut
2. 🥣 1/4 cup curd
3. 🥣1/4 cup coconut water
4. 🥣 1-2 green chilli
5. 🥣 15-20fresh curry leaves
6. 🥣 Salt to taste
7. 🥣 2 tbsp Oil
8. 🥣 1/2 tbsp mustard seeds

Step 1
In a bowl, add suji, curd, salt, sugar and water to prepare the idli batter. Mix and let it rest for 10- 15 minutes.

Step 2
Prepare the purees by grinding spinach leaves for green colour and beetroot for red colour. For yellow colour, soak saffron stands in water.Divide the idli batter into 4 equal parts once it has rested and add spinach puree in one part, beetroot puree in second part, saffron water in third part and let one part remain as is.

Step 3
Add 1/4 eno/fruit salt into each part of the colorful idli batter and mix well. Prepare the idlis by greasing the idli stand and steaming the idlis in it for 10 minutes.

Step 4
In a mixer jar, blend together coconut, curd , salt, coconut water, green chilli, 7-8 curry leaves into a fine paste.

Step 5
Temper it by preparing the tempering of oil, mustard seeds and curry leaves.
